Sweetwater Spice Company Smoked Habanero Brine is a fiery brine concentrate loaded with smoked habanero peppers, ancho chilies, onion, garlic, and balanced with the sweetness of apple juice. This is their best recipe...if you can handle it. Amazing, lip numbing, baked habanero hot wings are perfect on gameday. We've been told that a smoked pork tenderloin in their Smoked Habanero brine is so good one could mix a drink with it! Great on pork, poultry, and seafood.

Ingredients: Apple Juice (From Water and Apple Concentrate), Kosher Salt, Brown Sugar, Habanero, Onion Powder, Black Pepper, Smoked Serrano, Garlic, Tamarind Concentrate, Cayenne Powder, Chipotle, Cinnamon, Cumin and Celery Seed.
    1. Place meat in a plastic bag or re-sealable container.
    2. Shake bottle well, pour over meat, then add 1 part water for every 1 part brine bath (approximately 1/2 cup brine bath per 1 lb of meat).
    3. Squeeze excess air out of bag. Let meat soak in BBQ bath (see bottle for time) - make sure it is completely submerged in bath.
    4. Drain the brine and you're ready to cook!
    5. For most flavor, strain brine after use and apply caught spices as a wet rub.
